Výroba piv s ovocnou příchutí a jejich senzorické hodnocení

The theoretical part is focused on the description of the raw materials that are necessary for the production of beer with a fruit component. The beer production technology is outlined. Breweries and microbreweries that offer fruit beer in their portfolio are also mapped in the literature research. The practical part was focused on the production of fruit beer, when a beer containing basic ingredients (malt, hops, yeast, water) was produced and a fruit compo-nent in the form of puree (passion fruit, mango) was subsequently added to it. The beer was subsequently subjected to analytical and sensorial evaluation. For all samples, the volume and weight alcohol content, real and apparent extract and original wort extract were deter-mined using the FermentoFlasher device. As part of the sensory analysis, when appearance, drinkability, aroma and taste were evaluated, samples flavored with passion fruit achieved the best results.

This bachelor thesis deals with the description of the production technology of fruit beers. The literary part is devoted to the history of beer production, the characteristics of the basic raw materials, the technological process of production, the assortment and the legislative requirements for quality. Increased attention is laid on the fruit component its uses and its application into the beer during its production. In the practical part, 8 samples of fruit beers were analyzed. 4 samples were experimentally prepared in the Institute of Harvesting Technology of Horticultural Products Faculty of Horticulture at Mendel University in Brno and the remaining 4 were purchased in commercial chains and breweries. In the laboratory, ethanol, polyphenols and antioxidant capacity were determined in samples. By sensory analysis the organoleptic qualities of beers were evaluated. The flavor, smell, color, fruity taste, bitterness and overall impression were evaluated. The results were statistically evaluated and processed into graphs and tables.

The bachelor's essay "The changes on the beer market in the Czech republic" focuses on the contemporary condition of the beer industry in the Czech republic. The goal of this essay is to explain which changes are happening on our market and why. The theoretical part is focused on marketing communication, segmentation and the research of the market. The following part is the characteristic of the product -- beer and a description of the contemporary situation on the beer market, which has changed considerably in the past few years. The breweries come to the market with new products designed specifically for new segments of the costumers. The main attention is paid to the fruit beers and its consumers. The inseparable part of the essay is also a questionnaire with main focus on confirming the supposition according to which the "fruit beers" have been accepted well on the market.
